Steak Fajitas with Spanish Rice and Pinto and Cheese

Get thin eye of round steak cut into thin strips and cook until no pink, then saute frozen bell peppers and onions for five minutes until all the water is gone then add steak back in and sprinkle in fajita seasoning packet and 1/4 cup of water and mix really well into meat and vegetables.

Now for the Spanish rice (Knorr's) bring two cups of water to boil and add rice and cook for 7-9 minutes turn off heat and move to table with pot holder.

Now pintos and cheese..... take re-fried beans and put into microwave safe dish with 1 1/2 tablespoons of water and cook for 2 1/2 minutes or longer (depending what brand you have). Now with potholders take off lid and set aside sprinkle with shredded sharp cheddar cheese and let it melt on top of the re-fried beans then squirt on red taco sauce on top.....then serve.

Cat Bed

Here is an inexpensive way to make a homemade cat bed for your cat.

Take a medium to large sized box (Got mine from Costco) take a mattress cover sheet (from the dollar store) if you don't have those then a plastic drop cloth (also from the dollar store. Then get two soft car towels or covers or two shirts from the dollar store as well. Put plastic drop cloth or mattress cover into box, first spread all over the box and tuck into holes (if box has them) then lay down shirts or towels. Put their favorite toys in their new bed. (May take them a few days to get used to.)

breakfast burrito

This a breakfast dish that can be customized to the way you like, a Breakfast Burrito. Here's my take on a breakfast burrito: Crack two eggs into a bowl add a splash whole milk to the eggs and beat well, add egg to small skillet sprayed with cooking spray cook until egg is no longer runny and solid or you break it up into scrambled eggs for you breakfast burrito. Then in a separate skillet also sprayed with cooking spray, add 1/2 of large red bell pepper chopped up along with diced small yellow onion cook them for 15 minutes. Then add bell pepper and onion to eggs. Some other topping you can add to breakfast burritos: Already cooked breakfast sausages or bacon, or a fresh diced jalapeno or chopped fresh spinach.

Then large skillet saute one medium onion and minced garlic (2 cloves), chili powder cook for about 10 minutes. Add ground beef break up meat with metal spoon or wooden spoon and cook until it's dark brown. Meanwhile the meat is cooking, take one cup of water to small sauce pan let water came to a boil and then 1/2 cup of jasmine rice cook for 15 minutes. Then add fire roasted tomatoes, 1/2 cup chicken broth, 3/4 of cup of sharp shredded cheddar cheese to cooked ground beef then cooked rice to the cooked ground beef mixture. Divide it between the peppers and add 1 cup of chicken broth to large glass baking dish and then cover with aluminum foil and cook for thirty minutes at 350.
