breakfast burrito
This a breakfast dish that can be customized to the way you like, a Breakfast Burrito. Here's my take on a breakfast burrito: Crack two eggs into a bowl add a splash whole milk to the eggs and beat well, add egg to small skillet sprayed with cooking spray cook until egg is no longer runny and solid or you break it up into scrambled eggs for you breakfast burrito. Then in a separate skillet also sprayed with cooking spray, add 1/2 of large red bell pepper chopped up along with diced small yellow onion cook them for 15 minutes. Then add bell pepper and onion to eggs. Some other topping you can add to breakfast burritos: Already cooked breakfast sausages or bacon, or a fresh diced jalapeno or chopped fresh spinach.

Take 4 medium sized orange bell peppers wash in hot water then cold water, carefully chop off the tops of the bell peppers and remove the seeds and white membranes then using a tiny carving knife (from pumpkin carving kit) to make faces in each pepper (be creative as you want). Then large skillet saute one medium onion and minced garlic (2 cloves), chili powder cook for about 10 minutes. Add ground beef break up meat with metal spoon or wooden spoon and cook until it's dark brown. Meanwhile the meat is cooking, take one cup of water to small sauce pan let water came to a boil and then 1/2 cup of jasmine rice cook for 15 minutes. Then add fire roasted tomatoes, 1/2 cup chicken broth, 3/4 of cup of sharp shredded cheddar cheese to cooked ground beef then cooked rice to the cooked ground beef mixture. Divide it between the peppers and add 1 cup of chicken broth to large glass baking dish and then cover with aluminum foil and cook for thirty minutes at 350. Then remove foil and cook for another twenty minutes. Serve with biscuits or Texas toast and enjoy!
